The story

Chef Salvatore Morello leads the kitchen, and his path to Parma is a story of dedication and high-level training across Europe. After his initial hotel-school training in 2002, he began his professional journey alongside Maestro Peppino Sirianni, learning the foundations of local cuisine.
Chef Morello then refined his craft in kitchens across northern Italy and Berlin. His resume includes stages at three-Michelin-starred temples like Alain Ducasse au Plaza Athénée in Paris and Paul Bocuse in Collonges-au-Mont-d'Or. He held positions at the two-starred Fischer Fritz in the Regent Hotel and the Adlon Hotel's Essen Zimmer. Further experience came at La Vie by Thomas Bühner and Vendôme by Joachim Wissler. This rigorous training became the backbone of his style: rigorous, technical, and deeply researched.
At Inkiostro, this international experience is fused with the local territory, creating what the chef describes as a truly authentic cuisine. The result is an elegant, haute cuisine with a profound international breath, now grounded in the flavors of Emilia-Romagna. This refined approach has earned the restaurant a Michelin star, a testament to its high-quality cooking.

Inkiostro boasts a well-stocked wine cellar with over 900 labels, both Italian and international, selected for their novelty and innovative production methods. A curated list of roughly 150 distillates completes the offering, making it a destination for those who appreciate fine pairings.
