A Fire-Born Tradition

Parma Rotta takes its name from the point where the Parma stream used to break its banks and flood the surrounding land. Since 1984, this spot on Strada Langhirano has been defined by a single, ancient technique: cooking over a wood fire. The restaurant uses chestnut, hornbeam and beech – hardwoods from the nearby Apennines – along with crystalline pink salt from the Himalayas. Together, they give the meats a fragrance and depth that modern methods cannot replicate.

The Grill and the Selection

Grill is the heart of the kitchen. The team pursues a near-obsessive search across breeds to build the menu: Black Angus, Fassona Piemontese and Iberico pork, each offered in various cuts. These are among the most prized meats in the world, and the open fire lets their true flavour shine. The wine list, with over 1,000 labels, is curated by colour, region and provenance, guaranteeing a high-quality match for every plate.

Parmesan Roots

Alongside the grill, Parma Rotta honours its home territory. The famous cured meats of Parma are kept in dedicated aging cellars. Fresh pasta is made by hand, the old way. Traditional Parmesan dishes are reinterpreted with a modern touch – simple, direct, and respectful of the ingredients. The restaurant’s recognition as Michelin Recommended reflects its consistency and the conviction behind every dish.
