Marino was born from a shared passion and friendship between Antonio and Stefano. Their goal is simple: to share with you the pleasure of sitting at the table. Their language is quality. Starting from local customs and traditions, they arrive at a more modern concept of the same, writing their own vocabulary with a young and fresh eye, never forgetting where they come from.

The restaurant’s philosophy is to give voice to those who care about their territory, collaborating with artisans and small producers. This innovative approach to the history of their table is built on the belief that tradition can be exalted through gestures and cooking techniques, more than through recipes alone. The use of the grill, broths, and stews, along with the exaltation of less prized fish, is integral to their identity. The atmosphere is welcoming, and the table is rich with dishes meant to be shared—a shared journey between present and past.

The Menu: A Contemporary Fusion of Land and Sea

The menu at Marino is a vibrant expression of contemporary fusion cuisine rooted in the Adriatic. The a la carte offerings are a testament to creative pairings. Start with scallops and pink prawn with ponzu, spring onion, and quinoa, or a red mullet dish with sea lemon and passion fruit. The grilled scallops with bone marrow and tandoori masala are a bold, smoky choice.

Pasta dishes include socarrat-style rice from the Adriatic Sea (for two), charcoal-grilled potato gnocchi with pigeon and black truffle, and elica pasta with bouillabaisse and lemongrass. Mains feature monkfish with tomato, bosega (a local fish) with nettle, borage, bottarga, and pine nuts, and duck with shiitake. Desserts are equally inventive, with options like a maritozzo bun with cream and grilled lemon, or almond, acacia flower, black truffle, and coffee.

For a deeper exploration, the "Percorso Conoscersi" (70 euro) and "Percorso Marino" (90 euro) tasting menus offer a curated journey through the kitchen’s signature ideas, each available with a wine pairing.
