The story
On the Pesaro seafront, next to Arnaldo Pomodoro’s Sfera Grande, Nostrano is the restaurant where chef Stefano Ciotti brings his vision of country cooking to life. It opened in 2015, and earned its first Michelin star in 2017.
Ciotti’s path is a long one. Born in Rimini in 1973, he trained with Gino Angelini and Vincenzo Cammerucci, then worked at Taverna Righi in San Marino, Don Alfonso in Sant’Agata sui Due Golfi, and Armani Cafè in Paris. He was executive chef at Carducci 76 in Cattolica, where he won “Best Emerging Chef for Northern Italy” in 2009, and received his first Michelin star in 2010. In 2015 he opened Nostrano.
The cooking here starts from a simple observation: the people of the Adriatic coast have always been both farmers and fishermen. That dual identity shapes every menu. Ciotti’s approach is playful in composition yet harmonious across courses, marked by a straightforward elegance. Each dish is the result of deep study into an ingredient’s origin, its natural habitat, and how it was produced. He combines modern techniques with homestyle methods, always respecting the raw material.
The restaurant itself is warm and welcoming, with outdoor seating available. It offers private parties, catering, and takeaway. The Michelin star recognises the high quality of this cooking – a natural fit for a chef who has long balanced technical skill with a sense of place.
Nostrano’s menus shift with the seasons, always reflecting the tension and connection between land and sea. It is country cooking, elevated but never fussy, rooted in the flavours of the Marche region and the wider Italian tradition.
