The story
At Dell'Alba in Piadena, the Corbari family welcomes you to a trattoria that has been in their hands for six generations. The story began in 1850 when Celestino opened a rest stop and horse-changing station on a major artery of Northern Italy. Soon after, the Corbari family took over, and they have maintained the warm simplicity of country folk and the deep culinary traditions of the territory ever since.
The kitchen is rooted in the genuine flavors of Lombardian cuisine. The meal begins with the classic Antipasto della trattoria, a traditional welcome featuring ciccioli, aged salumi from local "tranquil" pigs, polenta, and giardiniera. The signature dish is the Tortello di zucca, a pumpkin tortello served with a sweet tomato soffritto—a De.Co. (Denominazione Comunale) recipe of Piadena. The filling of pumpkin, amaretti, and apple mostarda is balanced by the fresh acidity of tomato and a dusting of Parmigiano Reggiano Mantovano. Other pastas, like marubini in broth and bigoli, change with the season, while winter brings the classic bollito misto with house-made mostarde.
The wine list at Dell'Alba is a labor of love, curated by the family with a focus on natural, characterful bottles. It ranges from great, hard-to-find labels to incredible value wines, always ready to pair with the food. A special section, "Ragazze sole in cerca di compagnia," offers the last one or two bottles of a wine at a very convenient price.
