The story
Behind the stove is chef Claudio Di Remigio, whose cooking speaks the language of tradition, expressed through the noble craft of Italian seafood gastronomy. His approach is one of simplicity and poetry: raw ingredients become narrative, and each plate balances creativity with rigour. The result is a cuisine that draws from the colours and aromas of the "wild Adriatic," without ever masking the purity of the fish.
Standout dishes include the dramatic risotto alla fiamma, flambéed tableside with Centerbe liqueur, and cappellacci filled with burrata and scampi. The tasting menu "La memoria del mare" pays homage to the restaurant's history since 1986, featuring four seafood tastings, the signature risotto, and a fillet of sea bass in a potato crust. A "Menu al buio" offers seven courses for those who want to surrender to the chef's vision.
The wine cellar is curated to complement the food, with fragrant whites, structured labels, and local producers that speak to the territory. Desserts are equally considered, from a Valrhona Guanaja chocolate cream to a liquorice semifreddo with cocoa crumble and salted caramel.
