The story
In Pineto, a town on the Abruzzo coast, Chef Mattia Fuschi runs a restaurant that feels personal. It opened in 2017, when he was just 22. The name – Resilienza – is earned. His grandmother, a cook herself, gave him the passion; his mother, Lucia, manages the dining room. Together they create a restaurant that is both ambitious and welcoming.
The cooking is contemporary, but it is grounded in the local landscape. Fuschi works with small producers in the region, sourcing ingredients that change with the season. The menu offers a five-course tasting (€50) and à la carte options, all showing a clear, precise hand. A dish of Mangalica pork loin comes with sour cherry and agrodolce onion; a tortello is filled with fava bean and pecorino. The kitchen also offers vegetarian and gluten-free options, and the wine list is built to match.
The dining room is comfortable, with air conditioning and outdoor seating for warmer months. The service is attentive, guided by Lucia’s experience, and the atmosphere is relaxed enough for a special dinner or a quiet evening out. The restaurant is wheelchair accessible and has a private room for small ceremonies.
In 2026, Resilienza earned a Michelin Recommended award, a recognition of the quality and consistency of Fuschi’s work. It is a restaurant that rewards a trip to Pineto – a place where the chef’s story and the food on the plate are one and the same.
