The story
At the foot of the Spinale slopes, just 300 metres from the centre of Madonna di Campiglio, Ristorante Due Pini offers a refined take on mountain dining. The restaurant, located on the ground floor of the Hotel Chalet del Sogno, draws on the landscape of the Brenta Dolomites for its inspiration, and has earned a Michelin recommendation for its efforts.
The dining room is marked by a hand-painted stube—a traditional Alpine stove—alongside natural materials sourced from the surrounding valleys. The lighting and furnishings aim for an elegance that feels particular to mountain lodges, without losing a sense of warmth.
Chef Flavio Faedi grew up in the Romagna countryside, where his grandmother’s farm cooking first sparked his interest in food. After hospitality school, he worked stages in Michelin-starred kitchens and observed masters such as Gualtiero Marchesi and Gianfranco Vissani. He later took on leadership roles at notable properties like Palazzo Seneca and Castello di Reschio, before bringing his vision to Due Pini.
Faedi describes his cooking as contemporary cuisine, built on a balance of flavour, colour, and form. He looks to the local territory for primary ingredients, respecting tradition while pushing toward technical innovation. The result is a menu that changes with the seasons—winter and summer menus are offered—and a wine list updated annually. The kitchen’s focus remains on purity of taste and the quality of raw materials from Trentino and beyond.
The restaurant is open daily for dinner, and during high season also serves lunch. Booking is recommended, and the space includes a private Stube and a Cantina room for events.
