The story
Ristorante Mildas occupies a former medieval monastery in the small hamlet of Vadaione, just outside Giustino and a short drive from Pinzolo. The cross vaults and granite columns date from the 12th to 14th centuries, and the building has served as a stable, a post station, and a gathering place for locals long before it became a restaurant. Today, the Pizzini family—Mirko, Franca, and their team—runs the dining rooms with a quiet, confident warmth that matches the stone walls and vaulted ceilings.
The space itself tells a story. The Worship Room was once a chapel; the Cider Room stored apples for homemade cider; the Rabbit Room recalls the five cousins who kept rabbits won at a fair. Each room has been restored with care, preserving original details like a granite well and cherry-wood furniture from the early 1900s. The restaurant opened in its current form in 1986, but the name Mildas was born in 1966, when Mirko Pizzini first started serving food in Pinzolo. That sixty-year thread runs through every plate.
Mildas focuses on seasonal cuisine, drawing on ingredients from the surrounding valleys and organic farms. The kitchen’s signature fillet steak with herbs—organic beef roasted with mountain herbs and fresh chili, served with local potatoes—has been a favourite for decades. Other historic dishes include risotto with roasted pork shank, Trentino-style green gnocchi, and polenta with porcini mushrooms from the Adamello Brenta Park. The much-loved ricotta ice cream with bitter strawberry tree honey appears on every menu. Vegetarian and vegan options are always available, and the restaurant uses eco-friendly products, from organic detergents to compostable cotton napkins.
Michelin has recognised Mildas with a Recommended rating, praising its honest, seasonal cooking and the character of its setting. In a region where tradition runs deep, this is a place that honours its past while letting the flavours of the present speak for themselves.
