The menu reads like a journey through Italian culinary memory. Start with La Torta Manfreda, a medieval recipe of chicken liver mousse served with preserves. Follow with a Pasticcio toscano – pasta ragù of wood pigeon and mushrooms encased in pastry. Or the tortelli mugellani, potato and herb filled pasta mantecato with clarified butter and beef garum.
