The story
In the Magredi territory near Pordenone, between San Quirino and Aviano, La Primula stands as a testament to one family's enduring dedication. Since 1873, the Canton family has cultivated this address, evolving from a modest osteria into a destination for refined modern Italian cuisine. Today, under the guidance of chef Andrea Canton, the restaurant balances deep-rooted tradition with a contemporary sensibility, a philosophy that has earned it a Michelin star—a recognition it has proudly held for decades, making it one of the longest-standing starred establishments in Friuli.
The story is one of quiet persistence. The original osteria, known for simple fare like polenta and herring, served the stone quarrymen and teamsters of the Cellina river. Roberto Canton named it "La Primula" in 1952, and the family’s passion for gastronomy grew. Chef Andrea Canton now leads the kitchen, crafting dishes that give maximum prominence to local products, particularly those of the Friuli region, while weaving in innovative techniques. His cooking is described as a journey where "tradition and innovation" are in harmony, focusing on the joy of sharing and savoring food.
The dining experience is complemented by an extraordinary wine cellar—a jewel of over 1,700 labels. Carefully selected by sommeliers Pier Dal Mas and Marco Canton, the list pays special homage to native wines that perfectly match the kitchen's deeply territorial cuisine. The cellar itself is a curated space, a small temple to wine that has earned national recognition.
Beyond the fine dining restaurant, La Primula also offers a more casual Osteria, where traditional dishes are served alongside excellent wines in a setting adorned by local Friulian artists. For those wishing to extend their stay, six hotel rooms provide a restful, familial extension of the experience. Here, in this land of the Magredi, the Canton family continues their long history, offering a place where a meal is an encounter with time, place, and genuine craft.
