The story
In Pordenone, Sostansa is the realization of chef Stefano Sacilotto’s long-held dream. After years cooking in prestigious kitchens across Italy, the UK, and Corsica—including stints at the two-Michelin-starred Enclume and contributing to the Michelin star at Oro in Venice’s Hotel Cipriani—Sacilotto returned to his hometown to open his own place. The restaurant’s name, an old Friulian word meaning “substance” or “sustenance,” points directly to its philosophy: a genuine, high-quality experience rooted in the intrinsic value of raw materials.
The restaurant describes its cuisine as “urban, authentic and contemporary”—a style that earned it a Michelin Recommended distinction. The open kitchen is the first thing guests see when they walk in, setting the stage for a meal built on seasonal ingredients and the chef’s personal “Tales of Cooking.” The atmosphere is minimal and intimate, with marble, glass, steel, and wood reflecting a concrete, no-nonsense approach.
Sostansa offers a tasting menu as its primary format, with a 6-course option at €90 and a shorter 4-course version at €70. Wine pairings are available for both. The menu changes with the seasons and can accommodate vegetarian, vegan, gluten-free, and lactose-free diets. A well-curated wine list, displayed as part of the room’s design, complements the food. The team, including sommelier Edoardo and cook Riccardo, works under Sacilotto to deliver a dining experience that feels both polished and genuinely welcoming.
