Two Michelin stars and a Wine Spectator award in a baroque palazzo in Ragusa Ibla – Ciccio Sultano's Italian cuisine rooted in Sicilian history.

The story

Duomo by Ciccio Sultano – Fine Dining in Ragusa Ibla, Sicily

Sicily as Origin, Precision as Method

On Via Capitano Bocchieri, the baroque street that runs toward the dome of San Giorgio in Ragusa Ibla, Ristorante Duomo occupies the upper floors of Palazzo La Rocca — an ancient bourgeois apartment converted into an intimate dining room. The same building, incidentally, served as a set for Divorzio all'italiana. The address alone carries a certain weight.

Ciccio Sultano and the Making of a Vision

Ciccio Sultano came to the professional kitchen without formal masters, choosing Sicily itself as his guide. Study, research, and rigor became his method. His conviction is straightforward: truth matters more than trends, consistency more than effect. The restaurant earned its first Michelin star in 2004 and its second in 2006, recognition that confirmed what the kitchen had already decided for itself.

Sultano describes his Italian cuisine as "citrica" — not a flavor, but a tension. A spark that begins with the eye, moves through aroma, and arrives at the palate. It is, in his words, a patient construction: matter that is observed, concentrated, and transformed. The result appears immediate; the work behind it is silent and precise.

A Cuisine Built from Layers of History

Sicily is not a boundary but a passage — an island crossed by Phoenicians, Greeks, Romans, Arabs, and Normans, each leaving gestures and flavors that still coexist. Sultano's cooking moves through this stratification with awareness rather than nostalgia. History is not simplified; it is transformed into precision. That philosophy shapes every plate at Duomo, where contemporary Sicilian Italian cuisine carries the full weight of the island's past without being burdened by it.

The Cellar as a Second Identity

Steps from the restaurant entrance, the Cantina del Duomo functions as what the team calls a "wonder cave" — an extensive collection of Sicilian and Italian labels alongside prestigious international selections. Wine Spectator recognized the cellar with its Best of Award of Excellence in 2018, a distinction that reflects the seriousness with which wine is treated here: not as accompaniment, but as an integral part of the Duomo experience.

If you wish to savor the utmost splendor of Sicily, this is the perfect place. Il Duomo di Ragusa Ibla reaffirms, year after year, its central role in the Italian fine dining landscape. The dining room, elegant and harmonious, preserves that contemporary baroque style that converses with the beauty of the historic center: soft colors, light woods, artistic touches, and lighting that sets the stage for the gastronomic experience. An atmosphere that conveys solidity, warmth, and identity, perfectly aligned with its chef’s vision. Ciccio Sultano is currently experiencing a phase of extraordinary creative maturity. His cuisine, recognized for years for its depth and character, has achieved a unique balance between technique, expressiveness, and readability. Flavor remains the undisputed protagonist. The guiding thread is a tradition reinterpreted with contemporary clarity: scents of citrus, sea, spices, Mediterranean herbs, and memories of home and the shop. Sultano gracefully navigates contrasts and complexity. Many words, but in the end, the dish is eaten with sheer delight, and that is always what truly matters. The tasting menu continuously evolves while preserving cornerstones that have written the restaurant’s history. The quality of the raw materials is impeccable, the result of a selection process that places local fishermen, farmers, and artisans at the forefront. The service is precise, professional, and welcoming. A special mention goes to the dessert course. Technique and research, local ingredients, distinct aromas, meticulous sugar reduction, and finally, what leaves a lasting impression is the lavish presentation of the final, pantagruelic dessert trolley.
