Manuelina Recco: Ligurian Tradition and Modern Cuisine – Michelin Recommended

A Legacy Born in 1885

Manuelina begins with its namesake, an enterprising woman who opened a humble osteria on the outskirts of Recco in 1885. She won over local gentry, Genoa's elite, and Belle Époque figures like Montale, D'Annunzio, and Einstein – all drawn by her legendary focaccia. Her willingness to serve it at any hour became part of the lore. That passion passed to her daughter Vittoria and granddaughters Emanuela and Maria Rosa, who kept the osteria alive for decades.

From Osteria to Restaurant

In 1958, Gianni Carbone married Maria Rosa and took the reins. He transformed the osteria into a proper restaurant, winning the Mortaio di Argento in 1961 with his Pansoti alla Salsa di Noci. In 1960, Manuelina moved to its current home on Via Roma, a larger space that soon became a destination for gourmands – even cited by Umberto Eco in Il Pendolo di Foucault. The family later launched the Focacceria Manuelina in 1983, the first fast-food outlet dedicated to Genoese focaccia col formaggio, and expanded beyond Recco to Milan, Florence, Rome, and more.

Tradizione in Movimento

Today, Manuelina's great-grandchildren run the restaurant, guided by a philosophy they call "Tradizione in Movimento" – tradition in motion. The kitchen operates as a laboratory of ideas, balancing three concepts: absolute tradition (historic recipes improved but never altered), tradition in movement (classics revisited in a contemporary key while preserving their taste), and the excellence of ingredients presented as a spectacle at the table. This approach earned the restaurant a Michelin Recommended recognition for 2026, a nod to its seamless blend of Ligurian cuisine and modern techniques.

What to Expect

The menu is divided into the "Grandi Classici Manuelina e del Buon Ricordo" – a collection of dishes rooted in more than 135 years of family recipes – and "La Carta," where the finest Ligurian ingredients are selected and worked with modern techniques to create fresh sensations. Seafood features prominently, and the famous focaccia col formaggio appears as an antipasto or a taste. The wine cellar and drinks list are carefully curated to complement each course. The atmosphere is elegant and tranquil, with service that is attentive and unhurried – an invitation to savour the story on every plate.
