The story
In the center of Isera, just minutes from Rovereto, Locanda delle Tre Chiavi occupies a historic building originally built as a winery. The name — Inn of the Three Keys — hints at the layered experience: a restaurant, a B&B, and a place where local tradition meets thoughtful hospitality. The kitchen follows the Slow Food philosophy, emphasizing ingredients sourced within a 20–30 km radius, seasonal menus, and a deep respect for the land.
The menu changes with the seasons, drawing on produce from small local farmers, cheesemakers, and ranchers. Spring brings local asparagus; autumn brings mushrooms. Dishes are prepared fresh, rooted in tradition but open to interpretation. The wine list focuses on Trentino-Alto Adige labels, selected to pair naturally with the food. This commitment to quality and provenance earned the restaurant a citation in the Slow Food Osterie d’Italia guide and, more recently, a Michelin Recommended distinction for 2026.
