The story
On the shores of Lake Garda, in the heart of San Felice del Benaco, Duo is a restaurant built around a single, compelling technique: dry-aged fish. Here, fish is aged just as meat is, in a Dry Ager cabinet where temperature, humidity, and ventilation are precisely controlled. The process lasts from three to ten days depending on the species. Fibers relax, flavors concentrate, and texture transforms. The result is a more intense, deeper taste that never overwhelms.
This is the foundation of the kitchen’s modern cuisine, led by chefs Federico Pellizzari and Daniele Ghidini. Pellizzari, born in 1992 into a family of restaurateurs, describes his approach simply: “First comes the ingredient. Then the respect you owe it. Everything else is built around it.” Ghidini, a Brescia native from 1986, brings a more direct energy: “Red like the energy I put in. Every day, no filters.” Together, they work with seasonal ingredients and a wood-fired grill, creating dishes that are at once precise and full of character.
The atmosphere is relaxed, the kind of place where you feel at ease immediately. A wine list of natural labels, local bottles, and unexpected choices is designed to accompany the food with pairings that avoid the obvious.
