The story
For over twenty years, Degusteria del Gigante has been a fixture in the historic center of San Benedetto del Tronto. The last ten of those years have been recognized by the Michelin guide, a testament to the restaurant’s unwavering commitment to healthy food and local traditions, reinterpreted with a gourmet touch.
The philosophy here is built on a constant pursuit of quality. That means working with small local producers who provide healthy, sustainable raw ingredients. A defining element of the tasting menus is the use of wild herbs, harvested and prepared into refined, innovative dishes. The chef crafts his creations in tune with seasonal availability, aiming to deliver a unique and memorable meal that evokes pleasant sensations.
The regular offerings consist of two tasting journeys and an à la carte menu. The journeys take diners through a culinary and regional story, with a selection of either eight or five dishes chosen at the chef’s discretion. A carefully curated wine cellar, stored in two charming underground caves, allows each dish to be paired with excellent glasses of local and international labels.
Sigismondo Gaetani founded and has always led the Degusteria. His passion for food began in his teenage years through summer jobs in the restaurant industry, chosen with the goal of tasting different dishes and developing a refined palate. With this restaurant, that passion has become a mission: to tell the story of the region through flavors, textures, and aromas, and to introduce people from all over to a place rich in tradition and authentic products.
Great attention is given to local history and past recipes, which are rediscovered and reinterpreted for a meaningful culinary experience. Through collaboration between host Sigismondo and archivist Giuseppe Merlini, events are periodically organized to explore lost recipes, which are then reimagined by the chef. This is Italian country cooking at its most thoughtful and refined.
