PS Ristorante is the gourmet heart of Villa Petriolo, a tenuta in the Tuscan countryside near San Miniato Basso. Here, in the ancient wine cellars where concrete vats still speak of the estate’s viticultural past, chef Stefano Pinciaroli and his team work from a show kitchen. Their philosophy is straightforward: the greatness of a dish depends on the sincerity of its ingredients.
The restaurant’s contemporary seasonal cuisine draws directly from the farm. Ancient grains for bread and pasta, meat from estate-raised animals, honey from the property’s hives, and first-press olive oil—each element is known, tended, and perfected. This intimate knowledge of every stage of production allows Pinciaroli to translate agriculture into plates where technique and creativity amplify flavors that exist nowhere else.
Two tasting menus guide the experience. Istanti interweaves land and sea, moving between meat and fish with precision. Mater celebrates the vegetable world, exalting the richness of the garden and fields. For those who prefer to compose their own meal, à la carte options are available. The menu shifts with the seasons and the estate’s production, ensuring that each visit is distinct.
The wine list, curated by Lorenzo Caponi—maître de salle and sommelier—showcases the richness of Tuscan wine, with special attention to Villa Petriolo’s own labels and producers who interpret regional grapes with personality.
