The story
In San Severino Marche, the Cavallini family runs a restaurant that balances deep respect for Marche tradition with a restless creative streak. Chef Luca Cavallini leads the kitchen alongside his brother Simone, who manages the dining room and curates a wine list that he tailors to each guest like a bespoke suit.
The restaurant has held a place in the Michelin guide since 2016, recognised for its commitment to quality and technique. It also carries a Gambero Rosso fork, and in 2017 the Chef Award singled out Luca Cavallini as one of Italy’s rising culinary talents, a recognition that has been reaffirmed in subsequent years.
Luca describes his cooking as “briosa e rassicurante” — lively and reassuring. The menu draws on the finest local ingredients from the Marche region and beyond, and is built around both classic Italian dishes and more experimental combinations. Signature plates include a chilled spaghetti with tomato, basil, tomato water and marinated lime scampi; a Martini-inspired starter; and a baccalà heart prepared in the Ancona style with a crispy rice wafer infused with Lacrima di Morro wine. Handmade pastas are a point of pride, and the tasting menus change with the seasons.
The dining room was fully renovated in 2019, creating a more comfortable and relaxed space that suits everything from a romantic dinner to a business meal. The atmosphere is friendly and unpretentious, and the brothers’ approach is rooted in generosity and simplicity.
For groups larger than eight, the kitchen asks that you choose a tasting menu or a pre-agreed menu rather than ordering à la carte. The restaurant is closed Monday lunch, all day Wednesday, and Sunday evening.
