In the historic center of San Severo, across from an ancient grain pit that gives the restaurant its name, La Fossa del Grano has been a reference point for traditional Apulian cuisine since 1997. The Stella family runs this intimate trattoria with fewer than thirty seats, where brick-vaulted ceilings create a warm, welcoming atmosphere.

The story begins on August 23, 1997, when sister Tonia’s intuition brought together siblings Giuseppe, Luigi, Carlo, and Teresa. Today, Giuseppe Stella leads the kitchen, supported by young collaborators, while Luigi and Carlo welcome guests in the dining room, and Teresa dedicates herself to desserts. The family’s commitment to continuity and consistency has earned the restaurant a place among Italy’s best gastronomic guides, including a Michelin Recommended distinction.

The menu changes continuously, following the rhythm of the seasons and the availability of local ingredients. It opens with a generous selection of antipasti—small savory bites that range from sea to land—followed by first and second courses that celebrate combinations with legumes, vegetables, and recipes passed down through generations. Pasta and bread are made daily by hand, with orecchiette, cavatelli, troccoli, and stuffed pastas produced in a dedicated fresh pasta workshop just fifty meters from the restaurant.

Giuseppe’s philosophy is clear: preserve and pass on the recipes of the Apulian tradition, with small reinterpretations that enhance local products without distorting their essence. Raw materials come from trusted local producers, selected according to the season—a relationship built over thirty years with small agricultural, dairy, and wine producers of the territory.

The dining experience unfolds at the table, where Luigi and Carlo personally describe the day’s proposals, explaining ingredients and preparations. The meal begins with antipasti, then moves to primi or secondi. From handmade ravioli with caciocavallo podolico and datterino yellow tomato velouté, to orecchiette with turnip tops and anchovy, to braised beef cheek with creamy pumpkin and chestnuts—each dish reflects what the market and season offer at its peak. Desserts are exclusively homemade, closing the meal on a sweet note.

La Fossa del Grano remains a place where the cuisine guards memory and tradition, offering a genuine taste of Apulian and Italian cooking in an atmosphere that feels like home.
