The menu proposals change with the seasons and showcase a modern take on country cooking. A Traditional menu offers whole wheat spaghetti with white meat ragout and sage, followed by a deer stew with polenta and currant jam. The Mountain Flavours menu leans into more inventive territory: puccia bread and dandelion canederli with green bean cream, kefir, and sheep bottarga, then tamarind-glazed lamb shank with horseradish mashed potato and grilled pak choi.
