A BBQ octopus arrives with salted orange caramel and baby carrots in grapeseed oil, finished with a passito wine gel—a study in sweet-bitter balance. Marinated sea bass is paired with coconut milk, lemon gel, and pickled red onion, bright with green apple and coriander oil. A more playful note comes from the “finto pomodoro alla parmigiana,” a deconstructed take on the classic that substitutes a clever fake tomato for the real thing, served with Parmesan cream and yuzu jus.

Among the pasta courses, fregula risottata stands out: the toasted Sardinian semolina pearls are cooked creamy with blue crab, roasted pepper jus, and Laconi truffle. Black tagliolini brings marinated cuttlefish, pea cream, and sea urchins together in a dish that tastes of the sea. A nod to tradition appears in “Maccarones a ferritu,” a handmade pasta dressed with four tomatoes and topped with Fassona beef tartare and pecorino foam.
