The story
Within the ancient walls of the Relais San Maurizio, a former Cistercian monastery dating back to 1619, Il Ristorante di Guido da Costigliole offers an experience rooted in the traditions of the Langhe. The restaurant is part of a larger estate that includes a park, organic garden, and a full spa, but the dining room itself commands attention with its quiet, historic atmosphere. Here, the focus is squarely on the plate and the glass.
The restaurant’s Michelin star recognizes its high-quality cooking, which draws deeply from the bounty of Piedmont. The cuisine is a modern interpretation of Piedmontese classics, respecting the region’s rich gastronomic heritage while presenting it with contemporary finesse. The kitchen works in close concert with an extraordinary wine cellar, housed in the monastery’s original vaults. This cellar, started by Guido and continued by his son Andrea, holds over 2,800 labels. It includes legendary bottles from Burgundy and Bordeaux alongside a profound selection of Piedmont’s own greats—Gaja, Giacosa, Conterno—as well as small local producers that capture the essence of the territory.
The same dedication to authentic, original recipes is echoed at the estate’s other dining venue, Origini Bistrot, which describes its mission as returning to “the essential” and slowing down to enjoy. For Il Ristorante di Guido da Costigliole, this philosophy translates into a tasting menu that feels both rooted and precise. The wine pairings, curated from that vast cellar, are an integral part of the meal, offering a journey through the great crus of the Langhe and beyond. It is a place where the past—of the monastery, of the wine, of the recipes—is not a decoration, but the very foundation of the dining experience.
