In January 2024, a new generation took over: Luca Becce and Francesca Molinari lead the front of house, while chefs Giuseppe Ricchebuono and Alessia Vezzolla run the kitchen. The cooking is explicitly contemporary Ligurian – a cuisine that respects the region’s long history of simple, ingredient-driven dishes while allowing room for modern technique. The menu changes with the seasons, drawing on local suppliers for fish, meat, vegetables, and herbs. Appetisers like the Battuta di Cabannina (a chopped beef tartare) with BBQ sauce and La Spezia oysters set the tone, as does the fried “Cycnus” egg with a misticanza salad and Quiliano saffron mayonnaise. Pastas are handmade: gnocchi with house-made pesto, a “Gentile” spaghetti with tomato water and local cuttlefish, or ravioli stuffed with rabbit in the Ligurian style, finished with an olive and pine nut crumb.

La Valbormida di Bino (€50) is a land-focused four-course journey, while Il Mar Ligure di Bino (€55) showcases four seafood courses.
