The story
For more than sixty years, the Buscone family has run this restaurant in the hamlet of Bosmenso, a cluster of stone houses above Varzi in the Alto Oltrepò Pavese. The cuisine at Buscone is a direct reflection of its territory, born from the culinary fusions that define this borderland. The family follows the seasonal cycle of local products, letting the surrounding nature—their own vegetable garden, wild herbs, and ancient fruits—inspire their preparations. Traditional recipes passed down through generations are refined over time. The menu changes daily, with pasta and desserts all made in-house. Meats come from local breeders, and produce is sourced from their garden or nearby farms.
The restaurant’s standout product is its artisan salumi, including Salame di Varzi DOP, coppa, and pancetta, cured in a microclimate perfect for maturation.
