An Oasis of Taste Among Valtellina Vineyards

Perched on the terraced slopes of the Rhaetian side of the Valtellina Alps, Fracia sits within the namesake vineyards of the Casa Vinicola Nino Negri. The restaurant occupies a rustic stone building that once sheltered vine shoots, now elegantly restored to honour local rural traditions. In warm weather, guests dine under a pergola in the courtyard, with panoramic views of the valley below.

Chef Luca Cantoni’s Seasonal Italian Menu

Chef Luca Cantoni’s menu combines high-quality ingredients with a continuous search for new flavours and aromas, always rooted in Valtellina’s enogastronomic heritage. The result is Italian cuisine that is simple yet refined. Standout antipasti include the involtino of red radicchio with black truffle and scamorza, and the homemade cooked ham with asparagus and datterini tomatoes. Among the primi, the spaghettoni al torchio with veal ragù and thyme, and the tortelli with buckwheat purée, Parmesan fondue, and mullet bottarga, showcase the kitchen’s attention to detail. Secondi range from slow-cooked veal cheek with potato cream to a herb-crusted amberjack with tomato, oregano, and buttered vegetables.

A degustation menu of Valtellina classics is also available, featuring a salumi platter, pizzoccheri, slow-cooked veal cheek with potato cream, and dessert.

A Cellar Rooted in Territory

Valtellina’s ancient winemaking tradition, centred on the native Nebbiolo grape, is celebrated in Fracia’s cellar. The restaurant offers a broad selection of local wines, including a curated range from the award-winning Casa Vinicola Nino Negri, with DOCG Valtellina Superiore and Sforzato at the forefront.

This commitment to quality and value has earned Fracia a Michelin Bib Gourmand award, recognising good quality, good value cooking. It is a fitting tribute to a place where simplicity and refinement meet among the vines.
