The story
At Soltojo, Chef Giovanni Caracciolo brings his decades of experience to Macugnaga, the pearl of Monte Rosa. The restaurant is housed in a carefully restored Stube – a traditional alpine room clad in precious wood – that creates an atmosphere suspended between rustic heritage and contemporary elegance. Here, the warmth of the wooden interior sets the stage for a cuisine that defies borders.
Chef Caracciolo’s path is an impressive one: from Sous Chef at Monza’s Hotel De La Ville under Chef Liborio Massaneri, to directing the famed Ristorante alla Scala in Milan, and collaborating with the legendary Maestro Gualtiero Marchesi. He has cooked for the Dalai Lama and Michael Schumacher, and his work has been featured in Le Figaro. After consulting in cities from Milan to Copenhagen, he returned to Valtellina – a region dear to him – to open his personal project, Soltojo Experience, now established in Macugnaga.
The kitchen’s philosophy is built on respect for food, inspired by Japanese tradition, and a commitment to tranquillity, meticulous service, and seasonality. Menus change monthly to highlight the best local and sourced ingredients. The cooking is a creative fusion of Italian, French, and Japanese techniques, with influences from further afield – a style that earned Soltojo a place in the Michelin guide.
Diners can choose from tasting menus like the Omakase, where the chef selects seven ideas of “experience Fusion,” or the Japan Fusion Mare, featuring dishes such as caramelised prawns with teriyaki sauce and Hokkaido scallops. The Terra menu highlights pork belly takoyaki and amatriciana gyōza, while a vegetarian option offers poached egg in a cornflake crust with Toma fondue. Each dish is prepared entirely in-house, and the wine list draws on prized bottles from Val d’Ossola, Italy, and beyond.
