Tre Noci: A Family Affair Since 1968

In the quiet town of Spirano, just outside Bergamo, the Cristini family has been running Ristorante Tre Noci for over fifty years. The guiding principles have remained unchanged: a passion for the work, an eye for detail, and genuine warmth toward every guest. This consistency, rooted in tradition, has earned the restaurant a place among Michelin’s Recommended restaurants.

The setting is as distinctive as the food. The three dining rooms were once stables, now opened onto a lovely garden where dinner is served on warm spring and summer evenings. In winter, the immense fireplace in the central room provides both warmth and light, setting the stage for the meal to come.

Country Cooking and the Fireplace Grill

The kitchen’s focus is country cooking, with meat as the undisputed star. Steaks, chops, and ribs are cooked directly in that same huge fireplace, lending a deep, smoky character. The menu goes well beyond the grill. Starters include an array of cured meats: Parma ham, Praga smoked ham, Piacenza cured neck of pork, and homemade salami. First courses showcase the territory: risotto with porcini mushrooms, tagliatelle with duck, and potato gnocchi with four cheeses, a historical recipe from mother Lucia. Homemade filled pastas like Casoncelli alla Bergamasca and tortelli with braised tail or cod and clams are also featured. A generous cart of seasonal vegetables and a selection of Italian cheeses with homemade jam round out the savoury options, followed by desserts like pineapple tatin with coconut ice cream and torta della nonna.

A Cellar Built for the Grill

The wine cellar holds 300 labels, with a particular strength in Italian reds that pair naturally with the grilled meats. Of those, 250 are Italian, 50 are foreign, and 30 are Champagne. The selection focuses on the most representative wine regions of Europe, ensuring a fitting match for every dish.
