The story
Paolo Trippini is the third generation of a historic restaurant family, and his cooking is rooted in the green hills of Umbria. “La verde Umbria e le sue colline sono il cuore dell'Italia, da qui parte la mia cucina,” he says — the green Umbria and its hills are the heart of Italy, and that is where his cuisine begins. At Trippini in Civitella del Lago, that sense of place is tangible: the restaurant overlooks Lake Corbara, and the menu balances tradition with refined creativity.
The kitchen is a family affair. Paolo’s brother Luca Trippini, an expert sommelier, curates the wine list with passion and a deep knowledge of the territory. Together they have built an experience that earned a Michelin Recommendation for 2026, a nod to their consistent quality and respect for ingredients.
The menu changes with the seasons and offers options for all diets, including vegetarian, vegan, lactose-free, and gluten-free. A tasting menu is available, and wine pairings are carefully selected by Luca. The à la carte selection is described as an expression of Paolo’s soul — “fatta di passione e amore.” Dishes stay close to their origins while allowing the chef’s creativity to shine.
The restaurant also offers private dining, events, and cooking classes. Guests can book a “Chef in Villa” service for a traditional or gourmet menu at home, or join a hands-on class to learn fresh pasta, truffle dishes, or preserving techniques. For those who want to bring the taste of Umbria home, there is a food box with local products and ready-to-finish meal kits.
Dining at Trippini means sitting down to a meal with a panorama of Lake Corbara as the backdrop. The interior is air-conditioned, wheelchair accessible, and welcoming to families and pets. The atmosphere is formal enough to mark an occasion, yet warm — a reflection of the family’s hospitality.
Whether you come for a multi-course tasting menu or a simple plate of handmade pasta, the cooking here speaks of memory, land, and a quiet confidence that has made Trippini a destination in Umbria.
