A kitchen rooted in the forest

In the tiny village of Raveo, in the Carnia heartland near Tolmezzo, chef Gloria Clama runs Indiniò. Her cooking is a deeply personal project: the child who once ran through the woods collecting buds and fragrant plants has grown into a chef who turns wild mountain essences into refined Italian contemporary cuisine. Her gastronomic research balances lost flavours with a bold, avant-garde spirit.

The setting matches the philosophy. Indiniò occupies a restored 18th-century hayloft, its ancient stone walls, warm wood beams and soft lighting creating an intimate, welcoming atmosphere. Ten tables are spread across two floors, with sightlines to the wooden loft. Vintage details and modern art complete the space.

Clama, described on the restaurant’s site as determined, stubborn and viscerally tied to her land, leads both kitchen and dining room. Her team takes care of guests, guiding them through a meal where aesthetic balance and taste meet.
