In the heart of Trani, a city known for its port and historic cathedral, Osteria Frangipane offers a distinctly personal take on Puglian cuisine. Siblings Ivan and Sara Lacalamita run this intimate 40-seat osteria with a clear philosophy: meticulous research into raw ingredients, guaranteed traceability, and the courage to reinterpret tradition.
Their approach has earned them a Michelin recommendation. The restaurant’s white and light wood interior echoes the tones of the city, creating a calm, welcoming atmosphere that feels both refined and familial.
The Lacalamita family is central to the experience. In the dining room, Ivan Lacalamita welcomes guests as sommelier, while Sara Lacalamita manages the floor. In the kitchen, chef Gianluca Porcelli leads the brigade, supported by sous chef Cosimo and Domenico Lacalamita, who oversees the pass. Together, they interpret traceable ingredients from Puglia and Basilicata in seasonal menus where innovation is rooted in memory.
The restaurant is also a Slow Food "Locale Amico," reflecting a commitment to food that respects history, tradition, and the present.
The cuisine is driven by the seasons and the sea. A sample tasting menu begins with four shared antipasti, followed by a "Spaghettone Benedetto Cavalieri" with garlic, oil, chili, and mantis shrimp. A tortello filled with leek cream and mascarpone arrives with baby squid and black chickpeas from the Murgia region. Amberjack is paired with potatoes, green beans, and basil pesto. The meal concludes with shared desserts, and a three-glass wine pairing is offered for an additional €18.
