The story
In a stone-vaulted space near the heart of Trento, three brothers — Luca, Mattia, and Samuele — have built a restaurant that feels both ancient and new. They call their approach an “equilibrium” between rediscovering Trentino ingredients and inventing fresh flavours, a balance that plays out in the dining room as much as on the plate.
The brothers grew up with a passion for cooking in their DNA. After training and working in restaurants across Italy, they opened Augurio in 2020. The name is a wish, an augury for good things to come. And it seems to be working: the restaurant has earned a Michelin Recommended distinction, a nod that recognises its serious, thoughtful cooking.
The cooking at Augurio is rooted in country traditions — hearty, ingredient-driven dishes from the surrounding valleys — but the kitchen reworks them with modern techniques. The menu follows the seasons, changing to capture produce at its peak. A smart micro-greenhouse on site allows the team to grow shoots, herbs, and vegetables year-round, with an eye on sustainability and freshness.
The open kitchen gives diners a full view of the action, from the first sear to the final plate. There is a tasting menu designed to pair with wines from the cellar, a dedicated room where time seems to slow down among an extensive selection of bottles.
The restaurant’s interior is part of the story. The brothers fell for the location the moment they found it: a historic space in central Trento with exposed stone walls and vaulted ceilings. They furnished it with local larice wood and handmade porcelain, grounding the contemporary cooking in a setting that feels unmistakably Trentino.
Augurio is a place where tradition is not the end point but the starting line — and where the brothers’ shared passion flows from the kitchen into the dining room with natural ease.
