The story
Perched on a rocky spur that once jutted into Lake Toblino, Castel Toblino is one of the most celebrated castles in Trentino. The building began as a small temple to lake fairies, later became a strategic fortress, and was transformed in the sixteenth century by Bernardo Clesio into a residence for the prince-bishops of Trento. Today, it houses a restaurant that honors that dramatic setting with a kitchen rooted in place.
The restaurant is led by Chef Toni Shkreli, whose cooking is built on a constant search for quality and an emphasis on clean, natural flavors. His menus change with the seasons and draw a clear line between Trentino tradition and creativity. The result is a style of contemporary cuisine that is never conventional, yet always rooted in the ingredients of the region. Shkreli’s approach also looks toward the new frontier of health-conscious dining, without sacrificing pleasure.
Guests can choose from an à la carte menu, tasting menus, and a dedicated dessert menu, each designed to showcase the chef’s evolving ideas. The wine list complements the food with selections from Trentino and beyond. The atmosphere is inseparable from its setting: the castle’s stone walls, the lake visible from the windows, and the sense of history all around. Tables are available for lunch and dinner, and the restaurant can host private parties in a private room.
Castel Toblino’s consistent quality and distinctive location have earned it a place in the Michelin Guide as a Recommended restaurant. For anyone seeking modern cuisine in a truly extraordinary setting, this castle on the lake in Madruzzo, just west of Trento, is a destination in itself.
