The story
In the historic town of Pergine Valsugana, just east of Trento, Innesti is the embodiment of a simple philosophy: food culture and hospitality live together. The restaurant is the work of Elisa and Daniele, who built it from their shared desire to create memorable moments. Daniele is the chef; Elisa oversees the front of house and the sense of welcome that defines the place.
Innesti draws its name — meaning “grafts” — from the idea of connecting local traditions with new perspectives. The team grows fruits and vegetables in their own garden, and every dish respects the rhythms of the Alpine landscape.
Daniele’s cooking is rooted in seasonal ingredients and local produce, interpreted through modern cuisine that never strays far from its mountain origins. The menu is built around three tasting journeys:
