The story
Locanda Margon sits on a natural terrace in Ravina, just outside Trento, surrounded by the vineyards of Ferrari Trento. The restaurant is part of the Lunelli family’s estate, and its dining room – called the Salotto Gourmet – feels like a contemporary country house, with views over the vines and the surrounding peaks. It is a space that balances elegance with the warmth of a private home.
Since July 2019, executive chef Edoardo Fumagalli has led the kitchen. Born in 1989, he trained at Marchesino in Milan, then at Taillevent in Paris and Daniel in New York, before earning his first Michelin star at Locanda del Notaio in the mountains above Lake Como. At Locanda Margon, he describes his cooking as “simple complexity” – a light, balanced cuisine with well-defined flavours, built on three pillars: deep knowledge of ingredients, solid technique, and freedom of expression. The result is contemporary cuisine that respects its raw materials, especially those from the mountainous Trentino region.
Fumagalli offers three tasting journeys. Istanti Gourmet is a five-course chef’s free-hand menu, the lightest expression of his philosophy. Sparkling Passion is a collaboration with the Ferrari cellar team, pairing each dish with a Ferrari Trentodoc – from a Gillardeau oyster with glasswort tartare to roasted pigeon breast with oxalis sauce. Green Rousing Trentino is an ode to the wild nature of the region, featuring dishes such as a “mountain climb salad” that traces ingredients from the Arione stream to the Viote botanical garden, and kamado-cooked salsify with green curry. The cuisine is Contemporary in style, yet deeply tied to the land.
Locanda Margon holds one Michelin star, recognised for its high-quality cooking. That star is woven into every part of the experience – from the precision of the amuse-bouches to the thoughtful wine pairings from the extensive cellar. The restaurant also has a Bistrot, offering the same kitchen’s food in a more informal setting overlooking the garden. Whether in the Salotto Gourmet or the Bistrot, the focus remains on ingredients, technique, and a quiet sense of place.
