In Treviglio, just east of Milan, Ristorante San Martino has held a Michelin star for thirty consecutive years—a testament to the unwavering vision of chef-proprietor Beppe Colleoni. Entirely self-taught, Colleoni built his philosophy on classic Italian culinary references, rejecting fleeting trends and theatrical presentation. With his wife Olga by his side, he focused on the essentials: the selection of raw ingredients, the care of each product, and the pursuit of pure, honest flavor. A private garden supplies the kitchen with seasonal vegetables, herbs, and edible flowers—a direct link to the land that informs every dish.

A New Generation at the Stove

Today, the kitchen is led by Beppe’s son, Paolo Colleoni, alongside Stefano Locatelli and Alessandro Cavagnoli. Together they interpret the San Martino identity—respect for product and seasonality—while weaving together tradition, territory, innovation, and an international outlook. The result is a cuisine that feels both grounded and surprising, where seafood takes center stage.

The Experience

The dining room was completely renovated in 2019, marking the 25th anniversary of the restaurant’s first Michelin star. The space now feels contemporary and welcoming, with a garden, a lounge bar, and a view into the kitchen.

The menu changes with the seasons. Spring 2025 offers two degustation paths: “Passione” and “Entusiasmo,” both built around seafood—from violet prawns with green beans and dill to a shellfish soup, linguine with zucchini flowers, and blue lobster with carrot and yogurt. The Gran Plateau Royal presents a selection of oysters, marinated fish, and crustaceans, while a dedicated raw seafood composition and a selection of six oysters allow for a more focused start. Wine pairings, including a house selection and a “Stravaganza” option with wines from around the world, are available. A vegetarian menu and a cheese degustation are offered on request.
