The story

Gostilna Mahorčič, Trieste – A Family Tavern with Michelin Bib Gourmand Since 1890s

Over a Century of Welcome

Gostilna Mahorčič first opened its doors more than 120 years ago, serving carters who travelled through the village of Rodik. Today, that same stone house welcomes diners with a warmth that has passed from generation to generation. Martin Mahorčič and Ksenija Krajšek Mahorčič, the fourth-generation hosts, put it simply: "The inn is our home, and working in it is our lifestyle." Their goal is for every guest to feel as comfortable as if they were in their own kitchen.

Local, Seasonal European Cuisine

The kitchen draws on Slovenian gastronomic traditions, centring each dish on what is seasonal and local. Short supply chains connect the restaurant directly with nearby producers, ensuring ingredients are fresh and the region’s character comes through on the plate. This farm-to-table approach is not just a philosophy but a daily practice, reinforced by the restaurant’s Slovenia Green Cuisine and Green Key certifications. The Michelin Guide has recognised both the quality and the value here, awarding a Bib Gourmand for good-quality, good-value cooking and a Green Star for the team’s commitment to sustainability.

A Home That Welcomes

The atmosphere at Gostilna Mahorčič is unpretentious and genuine – the dining room feels lived-in, the service personal. An interesting wine list complements the menu, and the space is air-conditioned, wheelchair accessible, and has parking. Whether you come for a leisurely lunch or a late dinner, the welcome is the same: unhurried, generous, and rooted in a century of hospitality.

The experience begins the moment you step into the restored Karst house, revitalised with contemporary touches while carefully preserving its soul. The central dining room, designed around a traditional ceramic stove, creates a warm and inviting atmosphere for indulging in modern Karst-Brkini cuisine, where tradition elegantly meets fine dining. Among the house signatures, the aged cheese flan stands out, served on a delicate shallot sauce with a crispy fried egg yolk coated in cornmeal. A generous shaving of aromatic black truffle completes the dish. Equally impressive is the beef tartare in its forest-inspired guise: premium beef, lightly seasoned and topped with crispy breadcrumbs infused with pumpkin seed oil, accompanied by a porcini butter garnish, while mustard seeds add freshness and a subtle sharpness. Buckwheat porridge with white bean cream provide a hearty yet refined earthy base. The dish is complemented by a yogurt sauce enriched with excellent olive oil, while the eye is drawn to a rose crafted from thin slices of black radish marinated in beetroot juice. To finish, a chestnut tart with Brkini apples, quince, and rhubarb brings the meal to a memorable close. The Mahorčič family is known for original and daring plates that first captivate the eye and then conquer the palate. Familiar flavours transform into surprises, while the local becomes an experience that lingers long after the final bite - especially if you choose to stay overnight as well.
