The story
In the historic Villa Paola, a 16th-century convent that once housed the order of San Francesco di Paola, De' Minimi welcomes guests to a table rooted in history and reverence for food. The name itself is a tribute to the "minimi" friars, and the restaurant’s philosophy is built on the same principles of simplicity and respect.
The cuisine is a refined expression of contemporary Calabrian cooking, driven by a commitment to territorial enhancement and a zero-waste philosophy. The menu changes with the seasons, and the kitchen’s approach is one of creativity and restraint. The "Hortus Conclusus" menu, a vegetarian path, showcases this beautifully. Dishes such as cabbage interpreted through fermentations and toasts, or a tribute to bees celebrating biodiversity, demonstrate a deep connection to the land.
