Cannavacciuolo Bistrot in Turin opened in 2017 as a deeply personal project. Chef Antonino Cannavacciuolo, originally from Campania, moved to Piedmont and dedicated the restaurant to the region that became his adopted home – and to his wife Cinzia Primatesta, whose family roots in Piedmont run deep. The name “Bistrot” reflects their intention: an elegant yet welcoming space where guests feel the warmth of home while experiencing cuisine that speaks from the heart.

The kitchen brigade is led by Head Chef Gabriele Bertolo, who works alongside Cannavacciuolo to execute a menu rooted in the quality and genuineness of local ingredients. The restaurant’s commitment to sustainability is evident: it favours farm-to-table raw materials and offers a fully vegetarian tasting menu alongside its classic and seasonal options.

Cuisine that honours the land

The cooking at Cannavacciuolo Bistrot is Mediterranean, Modern Italian, and deeply Piedmontese. The à la carte and tasting menus change with the seasons, but signatures include “Tonno Vitellato” – raw Mediterranean tuna with bottarga mayonnaise and veal sauce – and “Linguina alla milanese.” A vegetarian path called “Natural Instinct” showcases dishes like zucchini “alla scapece” with Champagne and fabaceae, or potato with miso and basil.

The tasting menus, priced from 130 to 160 euros, offer a journey through the chef’s imagination: plin with broad beans and provolone del Monaco, lamb Wellington with grilled artichokes, or pigeon with fish stew and celeriac. Each course is paired with a curated wine tasting.

In 2018, just one year after opening, Cannavacciuolo Bistrot was awarded a Michelin star – a confirmation of the high culinary level reached by the chef and his brigade.
