On Via Carlo Alberto in the heart of Turin, Carignano presents a singular vision of fine dining. The restaurant offers a single, unified tasting menu—there is no à la carte selection. This approach allows the kitchen to focus entirely on a carefully composed sequence of dishes.
The menu is a celebration of the sea and the seasons. Dishes like "Legata a un granello di sabbia" pair abalone with mushrooms, spring onion, and a broth of Parmigiano, while "Onda su onda" is a minestrone of shellfish with a printanière of sea and a plankton macaroni soup. Other courses include turbot with Jerusalem artichoke and red wine glaze, eel with radicchio and tomato salad juice, and a grilled mullet with chicken skin, cuttlefish, and black mayonnaise. The meal concludes with desserts such as a cold fusion homage to Beppe Rambaldi.
