Three Spaces, One Philosophy

The establishment is composed of three complementary realities: the Michelin-starred Ristorante Del Cambio, the experiential Farmacia Del Cambio (a former apothecary dating to 1833, now a gourmet boutique), and Bar Cavour, a refined cocktail bar with an intimate smoking room called the Stanza Verde. Each space carries the same DNA: a blend of Piedmontese tradition and French influence, wrapped in an atmosphere of timeless elegance.

The restaurant’s guiding philosophy is Art de vivre—a celebration of beauty and pleasure that translates into every detail, from the curated plates to the ritual of service. The kitchen, led by Chef Francesco Rovai and supported by Chef Diego Giglio, draws on a culinary lineage that was first codified in the 1766 book Il Cuoco piemontese perfezionato a Parigi. This approach respects Piedmontese ingredients while applying French technique and contemporary sensibility. The cuisine is a modern interpretation of classic Mediterranean and French cuisine, deeply rooted in the local Piedmontese tradition.

Del Cambio’s commitment to excellence has earned it a Michelin star, recognizing its high-quality cooking, and a Wine Spectator Best of Award of Excellence for its impressive wine list. Head sommelier Mirko Galasso oversees a selection that complements the refined menu, available as part of the Chef’s Table experience with or without a curated wine pairing.
