Scatto sits on Piazza San Carlo in Turin, a setting that blends art and history. Here, Christian and Manuel Costardi—the brothers behind the Costardi Bros brand—write a fresh page in their ongoing story. Rooted in Piedmont but with horizons that reach far beyond, they describe themselves as “fratelli con radici in Piemonte e orizzonti lontani.”

The Brothers Behind the Kitchen

Christian and Manuel grew up in Vercelli, immersed in the kitchen of their grandparents’ hotel. Family and territory are the cornerstones of their cooking. Christian is driven by instinct and emotion; Manuel is methodical and precise. This dualism, they say, “in cucina si fonde in maniera perfetta,” creating dishes that are never predictable—golosi, direct, and playful.

A Cuisine Rooted in the Rice Fields

Rice is the ingredient that defines them. Surrounded by rice paddies as children, they now champion carnaroli and have even developed their own selection, Aironi by Costardi Bros, from meticulous grain control. Their cooking respects tradition while embracing a contemporary Piedmontese idiom—piatti in chiave contemporanea that keep the region’s flavours alive. The iconic symbol of their journey is the “lattina,” a can that began as a design object in 2012 after a collaboration with photographer Bob Noto and has since become a hallmark of their identity.

Recognition and Experience

Scatto’s approach has earned it a Michelin Recommended distinction for 2026, a quiet nod to the precision and soul in every plate. Seasonal menus, like the spring “Sequenze d’immagini, Sequenze di viaggio, Sequenze di ricordi,” draw on memory and roots, moving from Piedmont to distant lands while staying anchored in the local larder.
