The Sabinot family has been at the heart of Vitello d'Oro since 1964, when Antonio Sabinot first arrived as a waiter. In 1987, he and his wife Gigliola took ownership, and in 1991 their sons Massimiliano and Gianluca stepped in—Massimiliano as chef, Gianluca as maitre. This generational continuity ensures that the restaurant's traditions are respected while adapting to contemporary tastes.
