At Ristorante Vairo del Volturno in Vairano-Patenora, chef patron and sommelier Renato Martino brings the flavors of the Campanian countryside to the plate with precision and soul. The restaurant holds a Michelin recommendation, a recognition that underscores its commitment to “la cucina d’autore per la valorizzazione del territorio” — author’s cuisine dedicated to showcasing the land.
The cooking is contemporary Campanian, drawing directly from the surrounding region. Menus are built around the territory: a welcome aperitif from the kitchen leads into dishes such as carpaccio of seared beef, glazed eggplant with mozzarella gnocchi and elderflower broth, and spaghetti with tomatoes. The meat menu features local veal in two preparations — cheek and sliced — followed by small desserts. A five-course tasting of this land-based menu is €65, with shorter options at three courses (€40) or two courses (€28).
For those who prefer the sea, a separate fish tasting includes saffron prawns with almonds and orange, cuttlefish with herb sauce and licorice, and tubettoni with a white grouper ragù, lemon, and bottarga. Priced at €80 for five courses, it reflects the same philosophy of seasonal, local sourcing. Single dishes are also available: starters from €18, first courses from €16, second courses from €25.
A few off-menu plates stand out, such as a variation on lamb lauticauda at €30, and a raw fish and shellfish platter at €50 (served in two rounds). Every dish that includes raw ingredients is treated according to EC Regulation 853/2004 for safety, and the kitchen asks guests to note allergies or intolerances at booking so the menu can be tailored.
The atmosphere is understated and professional, with outdoor seating and air conditioning for comfort year-round. The restaurant is wheelchair accessible, and the dining room reflects the calm confidence of a chef who has held a Michelin star from 2007 to 2019 and continues to cook with the same disciplined creativity.
