The story
In the heart of Irpinia, the Fischetti family runs Oasis - Sapori Antichi, a restaurant that earned a Michelin star in 2026 for its high-quality cooking. The kitchen, led by Michelina Fischetti, draws on recipes passed down through generations and oral traditions gathered from the surrounding territory. The philosophy is clear: dishes of memory, ingredients of history, the cooking of mothers and grandmothers, adapted to the present without losing their soul.
The menu is a direct expression of this approach. The chefs describe their food as "traditional cuisine adapted to new nutritional systems, without distorting the harmony of ancient flavors." Expect clean, linear tastes that let each component speak. The "Tradizioni" section offers a la carte choices, including a starter of roasted caciocavallo cheese with pear and truffle, or a creamy salt cod with Neapolitan pumpkin and coffee. Among the primi, the ricotta ravioli with walnut sauce and burnt garlic have been a signature since 1988, while hand-broken candele pasta comes with an old-style ragù and caciocavallo fondue. Secondi feature white suckling pig with fermented papaccelle peppers and cooked Aglianico must, and farm rabbit with Mediterranean aromas, Ferrandina olives, and sour cherries.
The dining room is overseen by Puccio Fischetti and Raffaella, while the wine service, featuring an interesting list, is curated by sommeliers Pietro Carmine and Nicola Fischetti. The restaurant also offers a "Colazione di Lavoro" lunch menu on weekdays and hosts private events.
