The story
In the countryside of Vallo della Lucania, in the heart of the Cilento region, Aquadulcis occupies a space of rare beauty. The restaurant was born inside an ancient water mill that had been abandoned for centuries along the edge of a stream, in Contrada Tenda. This setting, where human craftsmanship bows to the truth of nature, sets the stage for a dining experience that is both grounded and inventive.
Chef Luigi Coppola leads the kitchen with a philosophy of simplicity and respect for the land. His cooking is an ensemble of ideas and research, where high-quality Cilentan ingredients meet unexpected contrasts and innovative techniques. The result is a contemporary take on country cooking – a cuisine that values the territory’s products while daring to surprise. The restaurant is the latest project of Tenuta Cobellis, an agricultural estate whose own olive oil, wines, and produce form the backbone of the menu.
The dining room holds just seven tables, with bare wood and carefully chosen ceramics. The service, led by an experienced maître sommelier, is discreet and attentive, guiding guests through what the restaurant calls a “tasting story.”
The experience is built around tasting menus, each a curated journey through the Cilento. The Degustazione Aquadulcis, at €80, offers nine courses including a beef tartare with burrata and hazelnuts, roasted scampi with foie gras and liquorice, and a risotto with turnip tops, anchovies, and candied lemon. The Degustazione Zenone, at €75, features trout with wasabi, scampi with coffee and fennel, and a tuna and bean dish with raspberry. For a lighter exploration, the Degustazione Dulcis, at €45, presents seven courses such as a local mozzarella, spaghetti aglio e olio, and lacquered quail.
Aquadulcis has earned a Michelin Recommended award, a recognition that speaks to the precision and sincerity of Chef Coppola’s work. Here, the flavors of the Cilento – sea and land, tradition and innovation – meet in a setting that feels both ancient and new.
