The story
In San Salvo Marina, just south of Vasto, the Fossaceca family has transformed a former pastry shop into a destination for refined dining. Al Metrò opened in 1999, born from a deep family tradition in hospitality. Today, it is run by brothers Nicola and Antonio Fossaceca, who together have shaped a restaurant that has held a Michelin star since 2013.
The kitchen is led by Nicola, whose cooking is an immersion in the flavours of Abruzzo. Adriatic fish and local produce are his foundation. He works with deep respect for regional traditions, reinterpreting them through a modern lens with rhythm, intuition, and notable technical skill. The result is a cuisine that feels both rooted and contemporary.
In the dining room, Antonio curates the experience with an equally thoughtful approach. The wine list mirrors the kitchen's philosophy: it moves in concentric circles, starting with the best local producers, expanding across Italy, and reaching into France. Antonio pays particular attention to small, often natural, winemakers, offering a selection that is both broad and personal.
The menu changes with the seasons, guided by the availability of ingredients and the intensity of flavours each period brings. The brothers believe in balance and continuity, keeping beloved dishes while introducing new ones born from experimentation. It is a precise, thoughtful process designed to build a coherent meal from start to finish.
