The story
Since 1987, Al Covo has been a fixture in the Castello district, run by the Benelli family with a philosophy that is as clear as the lagoon waters. The restaurant draws a loyal mix of locals and international guests, all drawn to its unpretentious warmth and its unwavering commitment to genuine flavors. This dedication hasn't gone unnoticed—Al Covo has earned a Michelin recommendation, a nod to its quality and consistency in the heart of Venice.
Al Covo’s kitchen is a direct reflection of its surroundings. The team prioritizes small producers, particularly those from the islands of the lagoon, the coastline, and the Venetian hinterland. Many of their ingredients are Presidi Slow Food, and the restaurant is a proud member of the Slow Food alliance of chefs.
The commitment is tangible: fresh pasta and desserts are made with stone-ground, organic flour from Mulino Marino, while extra-virgin olive oils come from small Italian producers. Fish is primarily from the Adriatic and Mediterranean (FAO 37), and never pre-frozen. Meats come from the respected Macelleria Fracassi, and cured meats from Antica Corte Pallavicina. The bread arrives daily from a local bakery, and the water glasses are even hand-blown on the nearby island of Murano. To further close the loop, the restaurant is part of "Osti in Orto," a collective of 13 Venetian restaurateurs who grow their own vegetables, legumes, and herbs on the island of Sant'Erasmo.
The menu at Al Covo changes with the market, but the spirit remains constant. It is an exploration of authentic Venetian seafood, from a bollito of Adriatic fish and shellfish to the day’s baccalà. The bigoli mori in salsa (made with ancient grains) follows a traditional recipe, and the spaghetti alle vongole is a testament to simplicity done right.
