Cuisine driven by the Rialto market

The menu changes daily based on the catch at Rialto, and the focus is firmly on local, seasonal seafood prepared in the Venetian style – sometimes revisited, always respectful. Starters like Baccalà Mantecato with crunchy polenta chips and pumpkin cream, or a classic Antipasto Misto alla Veneziana with mantis shrimp, octopus salad, and sarde in saor, set the tone. Among the primi, Tagliolini con Granseola (spider crab) and Spaghetti in Cassopipa – a slightly spicy seafood preparation – are signatures. The Gran Fritto Misto delle Carampane and Seppie in Nero (cutlefish in ink) with soft Bianco Perla polenta (a Slow Food presidium) are mainstays.
