The story
Just steps from Piazza San Marco, Bistrot de Venise opened in 1993 as a meeting place where food and wine meet art and culture. Patron Sergio Fragiacomo envisioned a space inspired by the early 20th-century French Café Littéraires, and the restaurant has since become a true Venetian landmark. Its Michelin recommendation reflects the consistent quality of a kitchen that balances deep tradition with thoughtful evolution.
Executive Chef Stefano Novello leads the brigade. After training at Locanda Locatelli in London, working under Marcus Wareing at the two-Michelin-starred Pétrus, and gaining experience in Australia, he took the reins in December 2021. His motto: “A life without research isn’t worth living.” This philosophy defines the restaurant’s approach to Venetian cuisine, which is divided into two strands: the Historic Venetian Cuisine, drawing on 14th- to 18th-century texts (by Cuoco Anonimo Veneziano, Bartolomeo Scappi, and others), and the Classic & Modern Venetian Cuisine, focusing on lagoon fish and shellfish with updated interpretations of festive dishes.
The menu is a journey through time. The “Raw-Cooked” Risotto – fennel-flavored risotto with shellfish, dill, and licorice – won first place at the 8th National Enogastronomic Competition “Ristotto del Sommelier.” The Prawns in “Saor” revisits a 14th-century recipe with sweet-and-sour spiced onions, sultanas, and almond milk. Other highlights include the “Raffioli de herbe…vantazati” (handmade ravioli with fermented ricotta and herbs, saffron sauce) and the Linguine alla “Buzara” with scampi. The wine cellar focuses on ancestral, classic, and biodynamic bottles, with a particular emphasis on rare wines – a passion that has driven the restaurant’s research since 1999.
The interior is intimate and romantic, with a summer terrace and a private “Casanova” room for up to twelve guests. The restaurant also offers a dedicated Romantic Menu, complete with a red rose and a heart-shaped “Cuor de Venexia” dessert. Whether for a special occasion or a quiet dinner, the atmosphere is elegantly welcoming, never stiff. Bistrot de Venise remains a place where Venetian cuisine – historic, classic, and modern – is served with genuine warmth and a deep sense of place.
